The love and passion of olive oil is a culture shared by the all the members of the Ben Fredj family. This family has been exploiting passionately their olive groves for decades. It is a tradition passed down from father to son. It has become vital not only for the family members but for the whole community as well.
This delicious, fresh and beneficial extra virgin olive oil is the fruit of the farmers mastering and knowledge. Our olive oil is, therefore, the outcome of a well controlled process starting from the very early steps of picking until the very final phase of extraction and storage.
Our olives are harvested once they mature and they are meticulously sorted out. They are squeezed at the same day of the harvest since oil fermentation starts within 24 hours. Extraction temperature does not exceed 27°C. As a matter of fact, when oil is extracted at a cold temperature it saves all of its nutritive and therapeutic qualities. The family members ensure the hygiene of the work according to the requirements of the FSSC 22000.
